Cava: A Sparkling Success Story

The global sparkling wine market is set to pop with $45.1 billion this year (2024), a figure divided between 2 main sectors for bubbly: $24.4 billion spent in restaurants, bars, and other out-of-home venues, and $21 billion for at-home enjoyment, whether from supermarkets, online stores, or local wine shops.

However, while sparkling wines continue to charm, volume growth is expected to slip, with an anticipated 1.3% decrease in 2025.

The Spanish Sparkler’s Moment

Cava from Spain is named for the underground cellars in which it is traditionally stored and holds about 10% of the world’s sparkling wine market. Although this Spanish bubbly boasts a dedicated following, it competes with the heavyweights of Champagne (France) and Prosecco (Italy), which hold larger shares of the market.

In 2023, D.O. Cava—Spain’s official designation for Cava wines—hit a new high with sales up 1.09% to 252 million bottles! The Spanish market alone saw a 4.02% jump, while international sales stayed steady with a small 0.25% dip, likely due to inflation and lower demand from the United States. But the real story? Organic Cava is on the rise, with a 24.59% increase in sales and over 32 million bottles certified organic, underscoring the region’s commitment to sustainability.

By the Numbers

•         Spanish Pride: More Spaniards than ever are choosing Cava, helping boost domestic sales.

Competing with Champagne and Prosecco

To shine amid the global competition, Cava has invested in quality improvements, with a particular focus on enhancing complexity in its Gran Reserva through stricter aging standards. Cava producers also celebrate their Mediterranean roots by emphasizing affordability and unique flavors. Adding to the variety, rosé Cavas and single-varietal options are now more widely available.

Alongside this innovation, sustainable practices are on the rise to attract eco-conscious wine lovers. While Cava faces an uphill battle against the deep-rooted prestige of Champagne and Prosecco, marketing is critical for success. Efforts to broaden brand awareness, from PR to sales training for sommeliers and retail staff, will be crucial in helping consumers align with Cava’s distinct identity and eco-friendly production.

Tradition with a Purpose

Founded in 1959, the D.O. Cava Regulatory Board established rules for Spain’s sparkling wine, with “Cava” officially recognized in 1969. Some key dates include:

•         1972: Creation of the Regulatory Board for Sparkling Wines

•         1986: EU membership grants D.O. wines premium status

•         1991: The Cava Designation of Origin is fully defined

Today, the Regulatory Board manages the Cava Protected Designation of Origin, overseeing strategy and compliance, especially under Law 6/2015.

1.           Roger Goulart Joseph Valls 2019 Guarda Superior Gran Reserva

Established in 1882 by Roger Goulart Josep Valls, this notable winery has a rich history rooted in the Penedes region of Catalonia. The original vision was to produce high-quality sparkling wines using Méthode Champenoise and this focus continues.

In the early 20th century, the reputation of the winery increased, particularly for its Cava. In the mid-20th century, the winery embraced modern winemaking techniques while respecting traditional methods. This blend of innovation and tradition has allowed it to maintain high standards and adapt to changing market demands. The winery has garnered various awards and recognition for its Cavas, solidifying its position in the competitive sparkling wine market.

Tasting Notes

This Cava typically showcases a blend of traditional grape varieties like Macabeo, Xarel-lo, and Parellada. The first impression of the Cava is that of a bright pale golden hue with fine bubbles. The nose detects a complex bouquet with hints of ripe citrus, green apple, peach, and apricot with suggestions of toasted bread, brioche, a touch of vanilla, and light floral notes from the aging process.

It is well-balanced with a lively acidity. Flavors of pear, lemon zest, and almond emerge, complemented by a creamy texture due to time spent on the lees. The finish is long with a pleasant minerality.

2.           Pares Balta Blanca Cusine Brut Nature 2016 Guarda Superior Gran Reserva

Nestled in the heart of the Penedes region of Catalonia, Spain, Pares Balta is a winery steeped in tradition and renowned for its commitment to organic and biodynamic viticulture. Established in 1790, it stands as one of the oldest wineries in the area, with a legacy of winemaking that emphasizes quality and sustainable practices.

Over the years, Pares Balta has embraced modern techniques while maintaining a strong connection to its roots. The late 20th century saw significant modernization, allowing the winery to implement organic farming practices that honor the land and its ecosystems. The eyes are rewarded with a hue of light green and pale yellow. On the nose, the Blanca Cusine Brut Nature offers an inviting bouquet of dried fruits, toasty nuances, and subtle hints of fruit compote. Traditional product methods combined with extended aging create a perfect harmony between acidity and sweetness, while notes of praline, spices, crystallized honey, toast, and orange peel linger delightfully on the palate.
