Ruby Garcia will be responsible for overseeing all operations at Phulay Bay, A Ritz-Carlton Reserve. As General Manager, Ruby will spearhead efforts to keep elevating the quality of service to guests, developing actions based on guest comments and leading the team in the endeavor to keep Phulay Bay as one of Asia’s most remarkable resorts.

Before then, Ruby also served as Executive Assistant Manager in the Rooms Division for the Taj Exotica Resort & Spa Maldives, where she helped increase guest satisfaction and quality assurance scores for the entire resort and raised repeat guest ratio by 40% since 2011.

With a bachelor’s degree in Communication Arts, majoring in Public Relations and Advertising at Assumption College, Ruby specializes in guest relations, resource management, and employee engagement. Most importantly, with over 16 years of experience in luxury operations and 7 years of reporting directly to the General Manager, and serving as sole authority in their absence, Ruby has extensive experience in all departments of luxury hospitality management.

Executive Chef, Nathan Chilcott

In his new role, Nathan Chilcott will oversee the resort’s five dining venues, including signature Thai restaurant Sri Trang, Lae Lay offering seafood & fish specialties Jampoon featuring international cuisine, Plai Fah as the casual poolside restaurant, as well as tropical cocktails and light bites at Chomtawan, the sunset lounge.

Chef Nathan joins Phulay Bay from his recent post as Executive Chef at Bangkok Marriott Hotel in Sukhumvit, where he managed a team of 75 Chefs. Throughout his impressive 17-year culinary career, Chef Nathan worked at premier dining establishments around the world, including Gordon Ramsay’s famous two Michelin star restaurant Petrus in London, Pangu, a 7-star hotel in China, and served as a private chef on several luxury super yachts in the Mediterranean and Caribbean.

Michelin-trained by Gordon Ramsay, Nathan has pursued his culinary career in prestigious restaurants and hotels worldwide for 17 years. An award-winning chef, he brings a dynamic, innovative energy to the dining experience at this luxury resort.

“We are very excited about these new additions to our executive team at Phulay Bay,” commented Mafalda Costa Tavares, Director of Sales and Marketing at Phulay Bay, a Ritz-Carlton Reserve. “Ruby’s extensive experience and engagement with the team, and Nathan’s creativity and passion for Asian cuisine will serve as crucial assets as we continue to provide memorable and immersive experiences for our guests”.
