In Madrid’s Plaza Mayor, on the corner of Cuchilleros towards Cava Baja and only a few metres away from San Miguel Market, you will find the new restaurant Orio Plaza Mayor, the latest gastronomy venture set up by Grupo Sagardi in the capital.

The restaurant stands out for its brand new take on the Basque tavern concept, with food based on an amply stocked “pintxos” bar, along with a varied menu inspired by Basque country fare. It features a large terrace area on Plaza Mayor, a “txoko” bar in the entrance area and an upper floor under the old eaves, with a set of private dining rooms.

This all gives the establishment an informal atmosphere, ideal for enjoying the best Basque coast dishes such as anchovies from Getaria in olive oil, San Sebastián style fish soup, clams in green sauce, “txakoli” mussels, San Sebastián style razor shells, griddled prawns and langoustines, plus the best freshly caught fish cooked in the local San Sebastián style, as well as the inevitable cod pil-pil.

Food lovers will also be able to eat the very best tuna in this restaurant, brought straight from the tuna fisheries in Barbate, Cádiz, in the shape of the red tuna tartar with Ibarra chilli that is available on the menu.

All these products share the limelight with the most exquisite seasonal produce, like live Marennes-Oléron oysters; fresh Piquillo peppers roasted over a wood fire and hand peeled; seasonal wild mushrooms with scrambled egg; Tolosa new red kidney beans with their “sacraments” or side dishes, and stewed white beans with tuna belly.

At the new Orio Plaza Mayor, Basque cooking also lends itself to meat dishes such as loin from pure-bred Maldonado acorn-fed Ibérico pigs; stewed oxtail from the Rioja Alavesa; tripe with chick peas, Vizcaya style; braised farmhouse pork ribs; mature female beef entrecote steak with oven-baked potatoes, and “Euskal Txerria” crispy comfit suckling pig served with wild mushrooms. All washed down with a wide range of white and red wines ideal for pairing with the best recipes.
